Beer Battered Fish & Chips

As there has been some interest in the recipe for DIY home-made beer battered fish & chips, here goes:

  • 100g fish fillet (white flesh) cut in strips

  • 20ml cold beer

  • 5 tbsp self-raising flour

  • Salt & pepper

    1. Combine the beer with the flour, using your hands. Add more flour if batter is too runny. (Using spoon to mix tends to break the bubbles in the beer more easily, causing it not to "rise" as much.)

    2. Season the fish with salt & pepper.

    3. Coat the fish with the beer batter and deep-fry for 3 minutes or until golden-brown.

    4. Serve it straight away with fries, salad and tartare sauce.

    To make more fish, just increase the ingredients proportionately. And here's the recipe for some home-made tartare sauce - no need to buy anymore!

  • 1 diced small onion

  • 2 chopped gherkins

  • 2 tbsp chopped capers

  • 1 tbsp chopped parsley

  • 2 egg yolks

  • 1 tsp mustard

  • 1 tsp white vinegar

  • 200ml corn oil

  • salt, pepper

    1. Combine the egg yolks, mustard and vinegar.

    2. Slowly pour the oil while hand-whisking continuously, till a thick consistency is achieved.

    3. Add all the chopped ingredients and season to taste.

    Both recipes are pretty easy - have fun! :)
