Voila!

Worked rather late again this evening. As usual, I wasn't really in need of dinner but I needed to fill The Boy's tummy or he'll be a grouch.

Yes, I won't let it go till I get it right. Instead of our usual option of buying dinner back for him, I proposed making him AGLIO OLIO. I needed him to be my "training ground".

Half an hour later, dinner was served. The aglio olio was a hit, FINALLY!! I'm getting the hang of it! He loved the salad too - with help from Maya Angelou. It's very simple and quick, called the Ashford Salad 96, from which I simplified further:

Serves 6 - 8 (which you can proportion out accordingly)

  • 4 tbsps extra-virgin olive oil

  • 3 tbsps lemon juice

  • 2 tbsps red wine vinegar

  • 1 tbsp sugar

  • 2 cloves garlic, finely minced

  • 2 heads romaine lettuce, or any greens

  • 1 large tomato, cut into small wedges

  • 1 large cucumber, sliced

  • Salt & black pepper to taste

  • Basically, just mix the oil, lemon juice, red wine vinegar, sugar and garlic together. Season with salt and pepper. Mix in tomatoes and cucumber, add in the greens. Toss till each leafy green has been well flavoured with dressing.

A simple dressing that's quick to do!
