Beer Battered Fish & Chips
As there has been some interest in the recipe for DIY home-made beer battered fish & chips, here goes:
- Combine the beer with the flour, using your hands. Add more flour if batter is too runny. (Using spoon to mix tends to break the bubbles in the beer more easily, causing it not to "rise" as much.)
- Season the fish with salt & pepper.
- Coat the fish with the beer batter and deep-fry for 3 minutes or until golden-brown.
- Serve it straight away with fries, salad and tartare sauce.
To make more fish, just increase the ingredients proportionately. And here's the recipe for some home-made tartare sauce - no need to buy anymore!
- Combine the egg yolks, mustard and vinegar.
- Slowly pour the oil while hand-whisking continuously, till a thick consistency is achieved.
- Add all the chopped ingredients and season to taste.

Thanks!!! I'm gg to try this one out but wow! 200ml of corn oil... hmmm, can I use grapeseed oil instead?
Chef said using red garoupa would be perfect. Can also coat the fish with salt, pepper and some plain flour. Then dip into beer batter.

when you're free do you mind passing me the teriyaki cod one as well? cod's DD's fav fish, and i'm tired of eating it just steamed or fried!
