Egged-Out!

Yesterday's cooking class was on EGGS. The different utilisation of eggs. As well as trying to make our first Caesar dressing for the salad. I would have to say POACHING eggs was really hard. Trying to wrap the whites around the yolk while it's rolling around in the pot of boiling water really takes some skill. Most of ours came out with broken yolks. Yikes.


From there, we used the poached eggs for the Caesar dressing as well as Egg Florentine. We also had fun making some scrambled eggs with smoked salmon, and trying our hand at making an omelette of Mushroom & Cheese.






Would I make some Egg Florentine or Caesar Salad at home? Too much work! I'd rather have one at the restaurant! :D

Overall, it was a pretty easy and relaxing class. But by the end of it, we were so egged-out that I don't think I'd be having eggs for the coming week! Next week, on pastas and risottos, Francoise warned that we would be working very hard, so come prepared Van!!! :)
